Do you know how much your inventory is costing you? – Part 4

Some would say that the link between ERP and baking is tenuous at best. However, my most recent culinary catastrophe got me thinking about SYSPRO’s functionality and convenience. Let me elaborate.

One of my favorite foods is bread.  I love the texture, the smell, the taste, and can consume it morning, noon and night.  In a previous blog I mentioned that I’ve been trying to follow a low-carb eating style and of course bread is now on top of the hit list.  After extensive Googling I found a simple and straight-forward recipe for a bread alternative called ‘Oopsies’.

The ingredients are few:

  • 3 eggs
  • 100g (3.5 ounces) cream cheese
  • A pinch of salt
  • ½ tablespoon Psyllium husks
  • ½ teaspoon baking powder

The method is not difficult either:

  • Separate eggs
  • Whip egg whites with the salt until very stiff
  • Mix egg yolks and cream cheese well, add psyllium husks and baking powder
  • Gently fold the egg whites into the egg yolk mix
  • Bake in oven at 150°C (300°F) for about 25 minutes

Since cream cheese comes in a 250g tub, I had to multiply the recipe by 2.5.  I took eight eggs and separated the whites from the yolk.  With happiness and vigor I whipped the egg whites until stiff in my trusty Kitchen Aid and like a true master chef took the bowl and held it upside down over my head.

Dramatic pause .

It held! Nope, that was not the moment that things went awry.  The egg whites were whipped into fluffy white clouds and stayed put in the bowl.

So I mixed the remaining ingredients and added the egg whites.  And this is when things fell apart.  Instead of folding in the egg whites gently I tossed them into the mixer and my fluffy clouds turned into a thunderstorm!

Nothing much I could do to save that batter.  My dogs now have lovely low-carb treats.

So this is when I started thinking about SYSPRO. Conveniently, SYSPRO has multiple units of measure so conversions are easily applied to scale your bill of materials (recipe) up or down.  In SYSPRO you can also (sequentially or parallel if needed) map your operations and attach your components to specific operations to ensure that your stock is issued when and where it is needed during the manufacturing process.

To prevent mistakes from occurring you can even have specific narrations for operations or, alternatively, attach free format notes or attributes (we call that custom forms in SYSPRO) to operations and/or components.  Here you can add warnings, specifications or general information for example ‘GENTLY FOLD the egg whites into the batter’.

You have different movement types and here, when we bake six Oopsies at a time, we will use the block movement type.  With full inspection functionality upon job receipt we can decide on the disposition of the finished product.

Lesson learned!  Next time I will make sure that I follow the recipe to the T.
